Somali-Style Bryiani Rice

Here is what you need to make this meal

which is basically the following

  • 3 cups of Rice "Basmati"
  • 1 ts Oil
  • Salt
  • Chicken thighs
  • 1 big Onion chopped
  • 1/2 ts Ginger paste
  • 4 Garlic cloves
  • Mozzarella cheese
  • Cumin powder
  • Cilantro
  • 2 cups of Plain yogurt
  • Fresh Mint
  • Any spices of your choice

and for the toppings

  • Carrots chopped into thin slices
  • Potatoes chopped into thin slices
  • Raisins
  • Pine nuts (normally found next to the baking toppings in walmart)

You start with your chicken by dumping the frozen chicken thighs into a large pot

After 2 minutes you dump the yogurt on the chicken thighs

Then you add the Fresh Mint leaves.

You let that cook for about 40 minutes (or until the chicken thighs become tender) after that you fish out the chicken thighs and place them on an oiled roasting pan.

Now the liquid that's left in the pot is full of flavor and is actually what we're gonna use to cook the rice with, so pour out the liquid on a strainer so you can separate the soup produced by the chicken from the fresh mint and yugurt.

Place the white and green mix of yugurt and mint on the top of the chicken thighs and put them in the oven for about 10 minutes then pull them out and put some Mozzarella cheese on top and put them back in the oven for two minutes.

Your chicken thighs should look like this when they are done.

Now you start working on your Rice. first thing you need to do is fry one big onion cut into 1/2 inch pieces in the same pot you cooked the chicken thighs in.

As soon as you put that in put some garlic and cilantro in the food processor, then dump them on the already frying onions at this moment you can add whatever spices you like. I used cumin powder and Maggi chicken flavor bouillon.

Simmer your onions and spices for about 1 minute then dump your washed Basmati rice in the pot.

Its very important that you mix the rice with the spices right after you add them together. and yeah, make sure your heat is set to LOW.

Remember the liquid (or soup) that left from cooking the chicken, well now we gon use it to cook the rice so just add it to the pot and make it totally covers the spiced up rice.

Then add 1/2 TS of Yellow Powder to the rice (you can buy them from any Indian spices store).

Again make sure your heat is set to LOW because the rice need low heat to cook. So while your rice is cooking start preparing your toppings. begin by frying the carrots

Also fry 2 potatoes in the same fashion (forgot to take pictures of that :() after you're done frying the french fries put them aside and empty out the oil in the fry pan and saute some raisin and pine nuts ( i made a big mistake by sauteing them both at the same time, raisins cook in about 2 minutes but pine nuts need about 30 seconds) after you done shut off the cooker and add the fried carrots and potatoes to the mix.

Now start working on your juice.

Add the Peach Halves, pineapples, strawberries, 4 spoons of sugar and the chili powder (available in the fresh fruits section in walmart) to the mixer then add some ice and cold water and mix em all together.

Congrats you are done now. all you need to do is put your rice on a plate top it with the carrots and raisins then put 2 pieces of chicken on the side and of course your homemade fruit punch and have at it.
