I made Peanut Butter Blossoms last night. I made a lot... almost all of which were devoured by hospital staff where I work.

I was a bit daunted by the idea of including Bisquick in cookies, but honestly, they turned out wonderfully. They'd probably be great to make with kids, since they're simple. It'd probably be fun to make them with different kinds of chocolate pressed into them as well, though they're very attractive with a regular kiss.

Ingredients:

  • 1 can sweetened condensed milk
  • 3/4 cup peanut butter
  • 1 tsp. vanilla
  • 2 cups Bisquick
  • 60 Hershey's kisses
  • Sugar

Instructions:

1. Blend together milk and peanut butter.

2. Add Bisquick and vanilla.

3. Roll into balls.

4. Roll balls in sugar.

5. Bake 5-6 minutes at 350 degrees.

6. Remove from cookie sheet and press one kiss on top of each.

Tips: Unwrap the kisses either before you start, or while the cookies are in the oven. It’s easier to press them into the cookies while they’re really fresh, and if you aren't quick, the cookie will solidify while you're pulling wrappers off the chocolate. Be careful moving the cookies after--the chocolate melts and smudges if you bump it.

They’re ready to take out of the oven when they’ve lost the shiny look. Check on them after four minutes, to make sure they don’t overcook. Better to pull them out earlier than later—they’ll still cook a bit while they’re on the pan, and there isn’t any egg in them anyway. Because they’re fairly dense, it’s easy for them to burn on the bottom. Check one when they come out of the oven. If they’re dark, move them onto a plate to stop the cooking process.
