Lower-Fat Chocolate Chip Cookies
I have seen lots of cooking threads, but haven't really seen many desserts being done. How else shall you finish off your sushi and steak without a sugary delight? I'd like to share a photographic session of baking with a vegan chocolate chip cookie recipe I altered. The ingredients I used were vegan, but are easily replaceable to use real butter. The reason why they're lower fat is because I used applesauce to replace half of the fat put into the recipe.
The recipe was given to me by a friend and I tweaked it around. These are the base ingredients to use. Easy stuff to find around the house! I doubled the recipe in this photographic adventure so this is what you'll need for a smaller batch:
- 2 heaping cups of all-purpose flour
- 3/4 cup of white sugar (can be a mixture of brown/white if you don't have enough of white. To make it ultra vegan, you can use any turbinado #1)
- 1/4 heaping teaspoon of baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract (not necessary. I like using it though)
- Semi-sweet chocolate chips (add as much as you want)
- A tablespoon and a half of water (if the dough is too sticky)
- 1/4 cup margarine (or butter)
- 1/8 cup vegetable oil
- 1/4 cup applesauce
You're going to need to pre-heat your oven to 375 degrees.
For the last three ingredients, you can alter it around. You can do half oil, half margarine or half oil, half applesauce, or 1/2 cup butter and 2 eggs, whatever you desire. The more applesauce you use, though, will create a rubbery dough and a chewy, cakey cookie. This recipe is really easy to work with if you don't have eggs and butter.
I have enlisted the help of Ice Mulder and Snappy Suit Mulder. (Scully was AWOL, let's pretend all of this happens during season 2)
Firstly, these are all of the ingredients I used in this batch:
Get a nice big bowl and drop in your stick of margarine. The vegan-friendly brand I used was Nucoa. You'll want it soft, so you can nuke the stick for about 15-20 seconds until it's squishy.
Now, measure out a bit of oil and add in your applesauce. Enlist the help of someone else to be your spotter in case if your oil bottle is larger than you.
And then the applesauce...
Drop this abomination in with the margarine.
Pour out your sugar next.
If you're like me and you ran out of normal sugar, you can combine it with..
It won't make the cookie as crisp, if that's what you like but it's great when you don't have enough normal sugar to go around
Now, if you used brown sugar, tap your spoon down to pack it all in. Toss it in with the applesauce/oil/margarine blob.
I didn't melt my margarine enough, so the mixture looks revolting. It'll look better though.
The time to add the vanilla and the almond is upon us.
What's that coming behind you, Snappy Suit Mulder? That's right, a surprise spooning!
You'll want a generous 2 cups of flour:
Ho! You're so playful, Snappy Suit Mulder!
Get a nice scoop of baking powder to toss onto the flour cup before you mix it in with the margarine.
Slowly add in about half of the flour.
Add in the rest. Now it doesn't look like that pile of barf anymore.
Get your chocolate chips.
Add in however many you want. I used the whole bag for my batch.
Digging right in is the best way to thoroughly mix in those chips.
Instead of greasing cooking sheets, you can just lay a piece of foil over a pan. Makes for easier cleanup.
Grab a small glob of dough and roll it inbetween your hands. Squeeze it between your palms to flatten it.
Ice Mulder is a damn glutton and wants to make giant cookies only for himself while he watches porno in his office. (You know he's thinking of Scully the whole time though)
Set the flattened spheres of cookie dough a bit apart from each other. Bake them for about 10 minutes, give or take a couple. All depending on your oven and how quickly they will lightly, lightly brown.
If you use less applesauce, your cookies will turn out looking like my last night's batch (flatter, and a bit browner and softer):
Give it some time and you should have some soft, chocolate cookies!
