Flounder Scramble

Ingredients[edit]

  • 3 eggs
  • 1 large fillet of arrowtooth flounder; you can get this in big bags of frozen fillets
  • 1.5 c fresh spinach (half a bag for me)
  • 1T olive oil

Method[edit]

  • Heat oil in a pan.
  • Saute 1c of spinach (about a third of the bag for me); this will look like a lot when you put it in, but it gets much smaller as it cooks.
  • Heat flounder until it mostly flakes. I just throw mine in the microwave for three minutes, since it's not a big deal for this recipe.
  • While the flounder is being heated, scramble the eggs in a bowl.
  • Flake the flounder as much as you can (it's okay if some isn't fully cooked yet).
  • Stir together the flounder and eggs.
  • Pour eggs and fish on top of the cooking spinach.
  • Top the eggs and fish with the rest of your spinach.
  • Flip the whole thing and break apart into smaller pieces.
  • As soon as the eggs are done to your liking, serve with a little bit of salt on top.
