Recipe by: Happy Hat Uploaded by Drimble Wedge

Ingredients:

  • 2 bottles of white wine or alcoholic cider
  • Brown rum – at least 20cl, more is appreciated!
  • 4 star anis anise
  • A thumb sized piece of fresh ginger, sliced thickly
  • Half a grated nutmeg
  • 20 black peppercorn
  • 2 sticks of cinnamon
  • 4 allspice
  • 4 juniper berries
  • 1 tsp whole coriander
  • Half a bay leaf
  • Zest of 1 lemon
  • Cane sugar

All the spices are to be whole, if they’re crushed, they will make the drink cloudy.

Crush the spices a bit in a mortar (not too much), just crack the peppercorns etc. and add them to 50 cl’s of water to a pot, and let it simmer for half an hour – leave until next day.

Strain the spice mixture, and add to wine/cider, and heat until right under boiling (80 degrees c), add sugar to taste, and add rum last.

Serve!
