Introduction:[edit]

During the week, I don't often have much time to cook. I get home around 5 from work, and need to have a nutritious and good-tasting meal on the table for my family no later than 6. Since I don't cook prepackaged meals, I do a lot of relatively simple dishes which require either little cooking time or in which I can space out my chopping and prep steps whilst previous steps cook. Here's a dish that is very popular with my family, and is also very easy and very good for you. Enjoy!

As each step cooks, one can do the prep for the next step.

  • First, saute the onion in some oil in a largish pot for about 5 minutes, until softened:

  • Then add the garlic, and go for a few more minutes:

  • Next in is the sweet potato:

  • Then the bell pepper:

  • Bring to a boil, then place the lid on the pot and simmer on medium-low for about 15 minutes, or until the sweet potato is tender. Towards the end of this, start heating up your griddle to cook the tortillas.
  • Remove the lid, and add the black beans. Cook these for a few minutes, until heated:

  • Next in is the mango. Stir this in and give it a minute or two to get hot:

  • Stir in the salt and the cilantro, and remove from heat:

  • Serve to your family with the tortillas (I put hot chile sauce on mine):
