This AM, my sharp eyed 4 year old spotted my griddle sitting on the counter. It was pressed into service last night to make quesidillas for some guests. She said "Dad, can we have pancakes for breakfast?!?!?!" and I felt obligated to brew up a batch for my bright eyed sweetie.

Ingredients

  • Ancient Betty Crocker cook book is not needed as I will copyright infringe that bugger for you right here.
  • 1 egg (large)
  • 1 1/4 cup milk
  • 1 tsp white vinegar
  • 2 TBSP vegetable oil
  • 1 1/4 cup all purpose flour
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp vanilla (optional)

Preparation

Add all ingredients to a large mixing bowl and turn over to your energetic youngster to whip the hell out of the goo until it's nice and smooth.

Pour the batter onto a preheated 350 degree griddle (a skillet on medium heat works fine). Unless you have wonderful non-stick stuff on your pan/griddle, you may want to lube the pan with a bit of fat before adding the batter.

When the batter starts to bubble through the non-griddle side of the pancake, it's time to flip them over. (yes, that's a fish shaped pancake with chocolate chips on the far right in a mold)

Cook the now flipped side until the bottom is golden brown.

Serve to your little rugrats with butter and a bit of warmed maple syrup.
