Mr. Wiggles' seitan recipe, as posted in Buttermilk ICSA XXXIII. Submitted by exactduckwoman

Ingredients[edit]

  • 2 cups gluten flour
  • Powdered broth (Mr. Wiggles recommends Seitanbacher brand)
  • Salt
  • Pepper
  • Thyme
  • Oil
  • Water

The standard recipe I use is 2 cups gluten, some seitanbacher powdered broth, a bit of salt pepper and thyme, some oil, and enough water to make a good dough with it.

Knead and stretch 20 times or so, then tear into small cutlets and boil in broth for 20 minutes.

Drain, and it's ready to go either into the recipe or into the freezer where it keeps very well.
