I'm not big on cinnamon, spice and everything nice, so I tend to just do what I always do and drink brown liquor. Last year I made Irish Cream for the first time based on this recipe, modified to taste:

Ingredients

  • 1 cup heavy cream
  • 1 (14 ounce) can sweetened condensed milk
  • 375mL Irish whiskey
  • 1 teaspoon instant coffee granules
  • 2 tablespoons chocolate syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

In a blender, combine heavy cream, sweetened condensed milk, Irish whiskey, instant coffee, chocolate syrup, vanilla extract, and almond extract. Blend on high for 20 to 30 seconds. Store in a tightly sealed container in the refrigerator. Shake well before serving.

I think we wound up adding a splash more whiskey and pinch or two more of the instant coffee to give it just the right flavor but didn't write anything down. I highly suggest tasting as you go. We used whatever Irish whiskey was on sale, I believe Tullamore Dew. This years specific recipe will be double to triple the above as it simply vanished, and I will be writing it down in the back my cocktail book.
