Hello. I am looking for some advice on my first attempt at homemade mulberry wine. This may sound ridiculous, but I would like to know if it is possible to achieve a flavor profile that is closer to a drier, bold Cabernet and less of a super sweet wine using other berries to assist. So far I have harvested and frozen 13 pounds of berries and have a lot more to go. I plan to make quite a bit of wine. I have read several different forums for some ideas / procedures. I was just curious if my idea of the cab style flavor is doable.
