My favourite one crust pie is Chocolate Kahlua Pecan Pie. It's like normal pecan pie but all liquored up.
- 1/2 C sugar
- 1/4 C butter, softened
- 1 Tbsp flour
- 3/4 C corn syrup
- 1/4 C Kahlua (or amaretto or whiskey)
- 1 tsp vanilla extract
- 3 large eggs
- 1/C semisweet chocolate chips
- 1 C pecans, chopped
- 1 9" pie shell, unbaked
- whipped cream for garnish
Preheat oven to 375 F. Beat sugar and butter until smooth, add flour. Gradually beat in corn syrup, the Kahlua, vanilla, and eggs. Stir in pecans. Sprinkle chocolate chips to evenly cover pie shell. Pour in filling. Bake until filling is puffed around edges and just set in center, ~45mins.
