Sparkling Watermelon-Cilantro Cocktail

Preamble[edit]

As anyone who has made watermelon salsa can attest to, Cilantro and watermelon go together wonderfully. You can play around with the amount/type of booze. Use rum and make it "Mojito" style if you want.

Ingredients[edit]

  • 1 small seedless watermelon
  • 4 ounces simple syrup
  • 1 bottle sparkling water
  • 1 bottle booze (good vodka or non-spiced rum)
  • 4 sprigs cilantro
  • leaves of cilantro

Method[edit]

Discard the watermelon rind, chop into rough cubes. Slowly add chunks to blender and pulse, allowing watermelon to release juice (DON'T add water to get it going. Its called watermelon for a reason, retard!) When its all filled up, add the cilantro sprigs and puree for a few minutes. Strain through a rough mesh, then again through a fine mesh seive or chinoise. If you're really anal you can allow it to strain through a coffee filter or whatever. Add simple syrup until very sweet (it will be diluted, so make it a little extra sweet.)

Place cilantro leaves in the bottom of a glass and mottle them lightly. Nobody likes chunks of green in their teeth so i suggest you don't pulverize it. Fill glass 1/4 full with booze, 1/4 sparkling water, 1/2 watermelon juice. Enjoy!
