Summary

In the background of many of my past cooking threads, you may have noticed my crock pot. Today, we're going to use it! We've got some good slow-cooked roast action going on with a nice helping of vegetables.

I've posted this particular recipe before in a recipe request thread from long ago, but I've never documented it fully.

Preparation

First you'll want to chop up your vegetables nicely. Cut them into good sized chunks. Instead of chopping up onions and potatoes, I used pearl onions and baby potatoes.

Next, dump everything into the crock pot (with the exception of the roast) and mix it up real good, making sure everything gets coated.

Crank up the heat on the crock pot, and add the roast. Get some of the slop in the crock pot on and around the roast so you've got it coated somewhat. No need to get a lot on there, just a bit.

Cover the crock pot and go have an eskimo pie. You've got four hours before it's eatin' time, champ. (Double it if the crock pot is on low.) After the time has elapsed, however, you should have some tasty looking cow.

Dish it out into a bowl, pour a cold drink and enjoy. The good thing about this recipe is that, in addition to being really easy and delicious, it can feed a person dinner every night for a week.
