Pasta with Hot Sausage, Zucchini and Mushrooms

Ok all you goon foodies, I got another one for you.

Here's what you need:

  • 1 box Pasta (something that stands up to a chunky sauce, like penne)
  • 2 large cans Tomato product. I like puree and crushed, for a smoother sauce.
  • 4-5 links hot italian sausage
  • 1/2 medium onion
  • 6 large cloves garlic
  • 2 bay leaves
  • Fuckton of oregano
  • about 4 medium zucchini
  • 2 small packages mushrooms (I like baby bellas aka cremini, they're more mushroomy)
  • Parmesan
  • not pictured:
  • olive oil
  • salt
  • hot pepper flakes (to taste)
  • handful of fresh basil

Method

First, chop your half onion and fuckton of garlic. (Only make this for a date if you know they're not a vampire).

Next, remove the sause from the casings, either by slitting the casing with your knife, or just by squeezing the guts out into the pan (which is the fun carnivorous way). Start browning that in a little olive oil, and break it up with your spoon. Once it's mostly cooked, add the onion and garlic, along with the bay leaves.

Continue to cook for another couple minutes, until everything's slightly browned.

Now, add the two cans of tomato product, along with the fuckton (add more than you think you need, trust me!) of oregano, and some salt.

Now's the time to go clean up your place a little bit, slob. I chose to: clean up the rest of my rummage sale shit empty the dishwasher clean the bathtub

and by god, put the stove on low during this time, and stir it every 10 minutes or so. Let it simmer for as long as you want, but at least for 35 minutes (the longer the better).

Now that it's been simmering, chop up the fuckton of veggies. Keep them nice and chunky. I like the crunch of the zucchini in the sauce, personally.

At this point, you can put the water on the stove for the pasta. Depending on how large you chopped your veggies and the doneness you like, you can add them to the sauce anytime. With mine, I added them about 5 minutes before the pasta was thrown in.

Once you add the veggies, add some more salt, and taste the sauce after a couple minutes. I added more oregano (told you to add more than you think, stupid) and some crushed red pepper because I like it hot.

Now's the time to go out to your garden and harvest the basil. Or just take it out of the fridge, whatever. You want a fuckton handful or two. I would have used more, but I found an earwig on one of the plants and got grossed out and ran to wash it all. I HATE earwigs.

Now your pasta should be just about done, along with your veggies in the sauce. Right before you serve it, stir the basil in. You just want to wilt it, not cook it. It tastes much better really fresh. Top with parmesan, and voila!

Yum Yum, this is my favorite pasta as of late, and it's got lots of veggies for my fatty ass!
