Kaddo's the first thing we make when sugar pumpkins show up in stores. It's pumpkin roasted with cinnamon and sugar, paired with both a yogurt sauce and a meat sauce (typically Morningstar Crumbles here).

Pumpkin:

  • One 2-2.5lb sugar pumpkin, peeled, cleaned and cut into 2" cubes
  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon
  • 2 Tbsp oil

Yogurt:

  • 1 cup greek yogurt (don't use non-fat)
  • 1 clove garlic, crushed
  • 1/2 tsp dried mint
  • 1/4 tsp salt

Meat sauce:

  • 2 tablespoons oil
  • 1 medium onions, diced
  • 1 lb lean ground beef (or one packaged burger substitute)
  • 1 tomato, finely chopped
  • 1 clove garlic, crushed
  • 1 Tbsp tomato paste
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1 tsp ground coriander seeds
  • 1/2 cup water

Preheat oven to 350.

Pumpkin: Heat oil in a large pan or dutch oven, brown pumpkin pieces, turning often to prevent burning. When browned (~5 minutes or so), sprinkle with sugar and cinnamon, stir, and bake until tender, ~30 minutes.

While pumpkin's baking, prep sauces.

Yogurt sauce: Mix yogurt, garlic, mint and salt. Add additional salt to taste, and refrigerate.

Meat sauce: In a 10" or so skillet, heat 2 tablespoons of oil and lightly brown onions. Add meat (or "meat"), garlic, salt & pepper. Mix well and cook until beef is browned, ~5m. Add tomato, spices, mix thoroughly and bring to a simmer for 5 minutes. Add tomato paste, lower heat, and cook about 20 minutes until thick.

Plate meat sauce, top with pumpkin, drizzle with yogurt sauce.
