Guinness Cupcakes with Irish Cream Frosting

First, I apologize for the lack of pictures. My camera is being loaned out, so obviously I wasn't able to take pictures of anything.

So if you are like me, and most other people, you probably like cupcakes. And if you are like me and a smaller number of people, you probably love Guinness. Well these cupcakes combine the best of both worlds. It may seem odd to put beer in a cupcake, but trust me they taste really good.

The first thing we have is the batter for the cupcakes:

  • 2 C unbleached all purpose flour
  • 1/2 C cocoa powder
  • 1/4 tsp salt
  • 1.5 tsp baking soda
  • 1 C granulated sugar
  • 1/2 C light or dark brown sugar
  • 4 oz. (1/2 C) unsalted softened butter
  • 2 tsp vanilla extract
  • 2 eggs
  • 1/2 C sour cream
  • 12 oz Guinness Extra Draught (A little less then a full bottle)

Set your oven for 350 degrees

Combine all of the dry ingredients in a bowl, and mix them together.

Once done put in your wet ingredients (Sans beer) and mix together well.

At this point I normally slowly mix in the Guinness until I get my batter to the desired consistency.

Line your cupcake pan with papers, and fill each with slightly less than 1/4 cup of batter.

Bake on the middle rack for approximately 20 minutes. Don't be tempted to place anything on the top rack, so you can get two pans done at once, the tops of the cupcakes will dry out if placed on the top rack.

While the cupcakes are baking, it's time to make the frosting!

The ingredient list:

  • 1 stick softened unsalted butter
  • 1/2 cup shortening
  • 2 cups confectioner's sugar (Powdered sugar)
  • 4-6 tbsp Bailey's Irish Cream (Or any similar brand)

Put the butter and shortening in to a bowl and combine with a hand mixer until fluffy

Add in the confectioner's sugar half a cup at a time, mixing well

Add in the Bailey's a little at a time. I usually start out with 4tbsp and see what the consistency is like, if after 4 tbsp it is still to thick, I add 1 tbsp at a time.

By the time you are done making the frosting, your cupcakes should be done, or close to done.

Frost your cupcakes, and dig in.

The Guinness doesn't add a "beer flavor" to the cupcakes, rather it gives it a nice rich taste in addition to the chocolate. Likewise the Bailey's doesn't make the frosting taste too boozy, as the rest of the ingredients balance it out.
